Spicy Food Sweat

Whay is the cuisine from areas nearer the equator spicy?
Since it’s hot in places like mexico and India i’d think that eating spicy (hot) food wouldn’t be desirable.
But the cuisine from areas where the temperature is consistently hot have hot (spicy) food.
Is it because eating spicy food makes people sweat, thus colling us down.
Or is it because they historically haven’t had refrigeration and spices help prevent food from turning rancid?
It’s about 70% cooling, and 30% originally rancid food.
